Bagnet Verd



Vi sono mancata? Chi di voi mi conosce sa che questo periodo è difficile per via di problemi vari,  due anni di fila in ospedali più problemi di computer, tra scheda video e la perdita di 1 tera di hard disc con sopra anche le foto per il blog. Purtroppo, ultimamente, il tempo che mi rimane per me è poco, ma cerco di sfruttarlo come posso. Ed ecco perché il blog è rimasto superfermo sigh.
E, un giorno, riuscirò anche ad avere una macchina fotografica decente.

Questa è una ricetta tipica della nostra zona che da sempre si fa in casa nostra. Mio nonno la faceva spesso quando io ero piccola. E' una semplice e classica ricetta, ma mi piaceva condividerla.

Ingredienti:

prezzemolo
mezza cipolla
mezza fetta di pane
2 pomodorini d pachino ( o altro pomodoro)
1 pugno di olive
1 pugno di capperi
3 acciughe sotto sale
1 spicchio di aglio
olio extra vergine di oliva
sale

Procedimento:

Per prima cosa lavate, asciugate bene e pulite i prezzemolo.
Spezzettate il pane in una ciotola con dell'acqua e aceto e lasciatelo ammorbidire.
Pulite e deliscate le acciuge.
Sttrizzate il pane.
Con una mezza luna tritate finemente il prezzemolo, i capperi, l'aglio, le olive, il pane, le acciunge, e i pomodori.






Mettete tutto in un contenitore  e verseteci  l'olio. Poi mettete in frigo a macerare per 24 ore.

 

Il giorno dopo lo potete servire sopra delle fette di pane o sopra altre pietanze a piacere.

 Those of you who know me, know that this period is a difficult one 'cause of some issues, such as two years in a raw in hospitals and 1 tera hard disk broken with  also the photoes for the blog inside. And that is why my time is limited in this period and the blog remanined blocked untill now.
 And, one day, will I also have a decent camera.I really hope so.

This recipe was always cooked in our house. My grandfather was doing it often when I was still very little. It's a typical recipe of our area.

Ingredients:

parsley 
half an onion 
half a slice of  bread 
2  cherry tomatoes (or other tomato) 
1 handful of olives 
1 handful of capers 
3 salted anchovies
1 clove of garlic 
extra virgin olive oil 
salt

Method:

First of all wash, dry well and and clean the parsley.

Break up the bread in a bowl with water and vinegar and let it soften.

Clean and  remove the bones of the anchovies.


Wring out the bread.

With a half-moon finely chop parsley, capers, bread, olives, tomatoes, garlic and anchovies.

Put everything in a container and pour the oil. Then put in the frdige for 24 hours.

The day after you can serve over slices of bread or on top of other dishes to taste.

HUANCAINA



Amo cucinare di tutto e questa volta siamo in Perù. Il compagno di mia cugina, che è di Lima, mi ha fatto avere questa ricetta di un tipico antipasto che preparano spesso. E' una ricetta con l' ahji, un particolare peperoncino peruviano mediamente piccante.  



(L'ahji è quello color arancio a destra, l'altro è il rocoto)






 Dosi per 4 persone

Ingredienti :

- 1 ahji
- un pizzico di aglio in polvere
- 2 pacchetti di crackers
- latte q.b.
- 1 philadelphia
- 2 cucchiai di arachidi
- una tazzina da caffé di olio di semi o mais
- 4 patate grandi lessate
- 4 uova sode
- olive nere denocciolate 
- lattuga

Procedimento:

Prendete i pacchetti di crackers e sbriciolate i crackers in un recipiente con del latte tiepido e lasciateli ammorbidire bene.

Tagliate l'ahji a rondelle (se volete che la salsa sia meno piccante, non mettete i semi e le venature, sono questi, infatti, a dare il sapore piccante).

Dopodiché mettete il peperoncino in un bicchiere da mixer insieme all'olio e frullate bene. Aggiungete l'aglio in polvere, 2 cucchiai di arachidi, i crackers leggermente strizzati e il philadelphia. Frullate tutto e aggiustate di sale.

Tagliate a fette le patate lessate e disponetele in un piatto insieme alle uova sode tagliate a spicchi.

Lavate la lattuga e mettetene qualche foglia come base per il piatto (io non avevo la lattuga e ho usato il pomodoro per decorare). Disponete le patate sopra la lattuga e, irrorate abbondantemente con la salsa (che deve avere una consistenza cremosa e morbida) e guarnite con qualche spicchio di uova e delle rondelle di oliva (che io non avevo).

Nota: per una salsa che possa andare bene anche per i bambini potete sostituire l'ahji con 1/2 peperone rosso e 1/2 giallo.



Huancaina

 



I love to cook everything and this time it's a recipe from Perù. My cousin's partner who comes from Lima, gave me this recipe of a typical appetizer they cook really often. It 's a recipe with ahji, a typical Peruvian medium spicy hot pepper.

Ingredients for 4 people:

. 1 ahji
. a pinch of garlic powder
. 2  packets of crackers
. milk as need
. 1 philadelphia or other cottage cheese 
. 2 tablespoons peanuts
- a coffé cup seed or corn oil
. 4 big boiled potatoes
. 4 boiled eggs
. pitted black olives
. lettuce





Method:

Take the packets of crackers and reduce the crackers in little pieces and put them in a container with warm milk and leave them soften.

Cut the ahji into slices (if you want the sauce less spicy do not put the seeds and veins, these are, in fact, the things which give the spicy flavour).

Then place the chilly in a glass mixer with the oil and blend well. Add garlic powder, 2 tablespoons peanuts, crackers slightly squeezed and philadelphia. Blend everything and season with salt.

Slice the boiled potatoes and place them in a dish along with boiled eggs cut into wedges.

Wash the lettuce and put few leaves on the plate as the basis for the dish (I did not have lettuce so I used tomatoes for the decoration). Put the potatoes on top of the lettuce, sprinkle with plenty of sauce (which must have a creamy and soft texture) and garnish with sliced eggs and olives.



Note: For a sauce suitable for the kids you can replace the ahji with 1/2 red pepper and 1/2 yellow pepper.
