Parker Rolls House versione vegana



Li avevo fatti nella versione originale e sono davvero fantastici e morbidi come una piuma.
Ora però, ho voluto provare a veganizzare la ricetta, per renderla accessibile anche a tutti coloro che per dieta o etica preferiscono evitare di mangiare altri esseri viventi
Questo è stato il tentativo numero 1 e devo dire che è riuscito bene, così ve lo propongo.
La ricetta originale la trovate nel Lievitario qui e Antonella Nicoletti è stata gentilissima a  permettermi di pubblicare la ricetta veganizzata. Grazie ancora :)

Ingredienti:
25 g di farina per il water roux
125 g di acqua per il water roux
340 g di farina di forza (io ho usato la Panettone Z del MulinodellaGiovanna)
340 g di farina tipo 0 (W 170)
180 g di licoli rinfrescato almeno 2 volte e maturo (se usate pasta madre solida mettetene 195 gr e levate 50 gr di farina dal totale)
200 g di latte vegetale + 100  da aggiungere successivamente.(io ho usato il latte di soia senza zuccheri, quindi meglio se auto prodotto)
100 g di zucchero (io ho usato lo zucchero di canna)
110 g di burro vegetale non idrogenato + 15 per spennellare
5 - 7 grammi di burro di cacao
1 Cucchiaino di sale

Procedimento:
Preparate il Water roux (o Tang Zhong)
In un pentolino mettete la farina e aggiungete gradatamente l'acqua mescolando con una frusta per amalgamare bene tutto senza creare grumi. Mettete il pentolino sul fuoco dolce e sempre mischiando portate la miscela a 65°. Aiutatevi con un sondino, o se  ne siete in grado fate a occhio. Il water roux è pronto quando è gelatinoso e si stacca bene dalle pareti del pentolino. A quel punto togliete dal fuoco e continuate a mischiare un attimo. Trasferite in un contenitore con pellicola (possibilmente senza pvc) a contatto perché non formi una pellicina. A questo punto aspettate che diventi freddo e iniziate a preparare il composto con il latte.

Mettete i 200 gr di latte e lo zucchero in un pentolino e accendete il fuoco. Quando lo zucchero è sciolto aggiungete il burro e quando è morbido  spegnete e lasciate sciogliere bene tutto e aspettate che diventi tiepido.
Ora versate il composto con il latte nella planetaria e scioglietevi dentro il licolì (o la pasta madre solida se usate quella) e amalgamate bene. Aggiungete la farina per panettone e il water roux e quando sarà tutto già un po' amalgamato aggiungete la farina 0. Per ultimo aggiungete il sale. A questo punto lasciate lavorare la planetaria finché l'impasto sarà ben incordato. E' un impasto molto morbido, quindi ci vorrà un bel po' (anche una ventina di minuti abbondanti, quindi non abbiate fretta).

Quando impasto sarà ben incordato mettetelo in una ciotola e infilatelo in frigo tutta la notte.
Al mattino tiratelo fuori e lasciatelo raddoppiare.
Al raddoppio formate tante palline dello stesso peso (aiutatevi con la bilancia). Io a questo punto  ho pirlato ogni pallina.
Stendete ogni pallina in un rettangolo usando il mattarello  e arrotondatelo su se stesso a spirale. Poi ri appiattitelo e ri arrotondatelo.

A questo punto metteteli in una teglia foderata di carta forno uno vicino all'altro (la mia era di ceramica per cui ho solo imburrato un po' la teglia). Coprite con pellicola e  aspettate il raddoppio. Se riuscite metteteli in un posto dove stiano a 28°.

Quando saranno quasi pronti accendete il forno a 170° e spennellate con latte vegetale e se volete potete aggiungere un po' di malto d'orzo (o riso) perché il colore risulti più forte dopo la cottura. Infornate per circa 30 minuti (dipende sempre dal vostro forno quindi regolatevi).
Sfornate e lasciate intiepidire. Una volta tiepidi spennellateli con un po' di burro fuso.
Potete gustarli sia col dolce che col salato, e sono morbidissimi.






  PARKER ROLLS HOUSE VEGAN VERSION



I've made them with the original recipe and they were so delicous and light, they were soft like a feather. So now, I wante to make this recipe accesible for all those prefer not to eat animals, being for diets, allegies or ethic reasons.

This was my first try and I think it was a rather good result, so I let you try it too.

This is my vegan version:

Ingredients:

25 g flour for water roux
125 g water for water roux
340 g flour about 360 400 W, used  for sweets like Panettoni or brioches that needs long time to grow. (ioused "Panettone Z" by MulinodellaGiovanna)
340 g flour W 170
180 g liquid sourdough refreshed at least two times (if you're using solid sourdough use 195 gr and remouce 50 gr flour from thetotal amount)
200 g vegetal milk (no added sugar)  + 100 gr you'll add on second time
100 g sugar (I used cane sugar)
110 g + 15 vegetable butter
5 - 7 grammi cocoa butter
1 teaspoon salt

Method:
For making the Water roux (or Tang Zhong):
Put in a pan the flour and add little by little  the water, whisk well with whip. Put the pan on a gentle heat still mixing. When the dough is at 65° C it's ready. If you don't have a thermometer water roux is ready when it's jelly. At this point turn off the burner and putthe dough in a container with plastic wrap in contact with it, so it will not make a scab. Let it cool.

Now put in a pan 200 gr of milk with the sugar and turn on the burner. Let it warm, then add the butter and let everything melt, then turn off the burner and let it cool.
Now put the milk mixture into  a boul (if you have a kenwood or kitchen aid use that) and add  the sourdough. Melt it into the milk mixture. Add the first flour and water roux and mix. When everything will be mixed add the W 170 flour and last the salt. Let it all mix and let it string. Don't be in a hurry since the dough is really soft, you'll need time.

Then putthe dough in a boul and wrap it in plastic wrap. Put it into the fringe for the whole night. The next morning take it out and let it double his volume.
 Now make it into balls and make a dough rounding with all of them.
Then flatten each one with a rolling pin, making each one in a rectangle and roll it in itself in a spiral. Then flatten it again and roll it again.

Now put each ball in a pan with baking paper, one beside the other. Cover with plastic wrap and let it double his volume.
When its ready  spread them with some vegetable milk (you can also add some  malt) and put the pan into dhe pre-heated oven at 170° C for about 30 minutes.
When the rolls are cooked let it warm and then spreado n them some vegetable butter and let it cool.
Now enjoy them with salted or sweet food!

Pane con arancia candita, zucca e zenzero di Antonella Scialdone


Si lo so non pubblico nulla da un po'. Diciamo che sono successe alcune cose.

Ma veniamo alla rictta.

Okay, ho fatto un paio di modifiche ma di base la ricetta è sua. Io ho fatto mezza dose perché altrimenti non lo finivamo. E ho messo meno lievito.



PANE CON ARANCIA CANDITA, ZUCCA E ZENZERO A LIEVITAZIONE NATURALE 

 da "Pasta madre, pane nuovo, grani antichi" di Antronella Scialdone.




Ingredienti:
200 gr di pasta madre solida rinfrescata di frumento (io ho messo il 20% di pm rispetto alla farina)
100 gr di zucca cotta al forno e frullata
120 gr di arancia candita
600 gr di farina rimacinata di grano duro
 390 gr di acqua
 8 gr di sale
3 cm di radice di zenzero fresco grattugiato

 Procedimento:
Cuocete la zucca al forno, frullatela e lasciatela raffreddare.

Preparate l'autolisi con la farina e l'acqua in una ciotola e lasciatela a riposo per almeno 30 minuti.

Trascorso il tempo di riposo aggiungete la pasta madre spezzettata all'impasto. (Io ho aggiunto altra acqua avendo messo meno pm), la zucca e il sale e impastate fino ad ottenere un impasto bello liscio.

Unite l'arancia candita e il succo di zenzero  (io ho messo anche la polpa perché mi piace molto).

Formate una palla e coprire con la pellicola e lasciatelo riposare per 1 ora.

Passato questo tempo riprendete l'impasto e sgonfiatelo, e fate una serie di pieghe a tre, coprite con la pellicola e lasciate riposare per un'altra ora.

Alla fine dell'ora riprendete l'impasto e formate una pagnotta. e mettete alievitare con la chiusura verso l'alto in un canovaccio con chiusura verso l'alto. Ricoprite con la pellicola e lasciate riposare per circa 3-4 ore o comunque al raddoppio. Dipende da quanta pasta madre avete usato e dalla temperatura a cui sarà esposto l'impasto.

A me ci sono volute molte più ore data la poca pasta madre e la bassa temperatura. se potete mettete a lievitare a 28 gradi.

Al raddoppio rovesciate l'impasto sulla teglia rivestita di carta da forno e infornate in forno preriscaldato a 250° C con vapore per i primi 10 minuti, poi (se avete usato un pentolino d'acqua a questo punto togleitelo) abbassare a 200° per 30-40 minuti.

Sfornare e lasciare raffreddare compeltamente prima di servirlo.

Ed eccolo qui aperto.



BREAD WITH CANDIED ORANGES, PUMPKIN AND GINGER MADE WITH SOURDOUGH

I know didn't published anything for the last months, just say life happened.

Now, about the recipe, I made some little changes, but the original one is here:

Ingredients:

200 gr sourdough refreshed (I sused 20% sourdough)
100 gr di pumpkin cooked into the oven and whipped
120 gr di candied oranges
600 gr di , re-milled durum wheat flour
 390 gr di water
 8 gr di salt
 3 cm di fresh ginger radix grated


Method:

Start with cooking the pumpin in the oven until soft, then whip it and wait until it's cool.

Make the autolyze with the flour and water and let it be for 30 minutues.

Now add the sourdough broken in pieces. If you have a kneading machine (like kenwood or kitchen aid)you can youse it. (I have added more water but that was my choise since I used less sourdough), The pumpkin and salt and knead everything until you obtain a smooth mass.

Add the orange and the ginger jouce (I also used the pulp).

Form a ball and cover with film and let it rest for 1 hour.

Now deflate the gough and make a serie of folds, then cover with film and let it resto for an hour.

Then take the dough and form a loaf and put it into a rag and let it grow for about 3-4 hours or more. It depend on how much sourddough you have used and the temperature the dough is. The best condition is to let it be at 28°C.

When the loaf is doubled overturn it onto a baking tray covered with cooking paper and cook in a pre heat oven at 250°C for 10 minutes with steam. After this time if you used a pan with water put it away and cook the bread for another 30-40 minutes at 200°C.
Let the bread cool before open it.

E' ora del Panettone!!!


E si, è giunta anche quest'anno l'ora di fare il panettone. E come ogni anno faccio sclerare mia madre perché mi metto a lavorare la sera. Però poi lei mangia volentieri, e non solo lei :P

Dunque la ricetta che uso è quella di Papum, che potete trovare qui.
Io però non lego la pasta madre. In genere mi limito a fare tutti i giorni il rinfresco per una settimana e poi il lievitino la sera prima dell'impasto e i due rinfreschi il giorno dopo.

I canditi non li compero, quelli che vendono li trovo immangiabili.

Li faccio io nel corso dell'anno, e credetemi, fatti in casa sono tutta un'altra cosa.

E considerando che quando  ne apro uno dura meno di tre giorni direi che è buono.
Solo un consiglio. Quando lo fate non mangiatelo subito. Lasciatelo qualche giorno ariposare, in modo che i gusti si amalgamino bene.

A traditional Italian sweet: Panettone.



Yes, also this year it's time to make this traditional Christmas sweet: panettone.
And like every year my mother is in panic, because I work for two evenings for this sweet, but when it's time to eat this fantastic sweet she gladly do it. And she's not the only one.
You can find the recipe I use here.

But I don't tie the sourdough. Normally I only do one maintenance in the evening before the actual dough and two the day of the dough.

The candied fruits well... I never buy them, I really don't like the ones they sell, so I make my own candies fruits myself (you can find tons of recipes on the net).


I can only give you a suggestion. When you make this sweet, don't eat it immediately, but let it rest for at least a couple days, so that the scents and tastes can melt.
