Involtini di cavolo a modo mio




A volte mi verrebbe da proporvi per intero i commenti dei miei amici e parenti alle mie invenzioni, esperimenti e nomi. Sono alquanto originali e divertenti e rallegrano la giornata.
Vi faccio un esempio: mia cugina, leggendo il nome del mio blog, ha commentato: “Sembra un codice fiscale alieno!”; invece la mia amica e proofreader ha commentato che il nome del cioccolato “Van Houten” sembra un gruppo musicale anni '70 (suppongo si riferisse ai Van Halen). Non le do torto, pure io lo pensai la prima volta che lo vidi scritto, anni fa. 

Questa è la classica ricetta con gli avanzi.
Avevo un po' di questo e un po' di quello, così, per utilizzare i rimasugli invece di buttarli, ho fatto questi involtini.



 Per due pezzi:


Ingredienti:

2 foglie di cavolo
1 cucchiaio di graniglia di soia
1 cucchiaio di tritato di sedano, carota, cipolla e sale  (una specie di dado vegetale fatto in casa insomma)
una grattugiata di pecorino
pane pesto q.b.
1 uovo
1 cucchiaio di tonno in scatola
sale
pepe
aglio (facoltativo)



Procedimento:

Mettere la soia  in acqua con un po' di dado per circa 5 minuti, scolarla e strizzarla bene.



Nel frattempo sbollentare le foglie di cavolo finché le foglie risultano molli, ci vorranno circa circa 2-3 minuti. Scolarle e asciugarle.



Appoggiare aperte le foglie di cavolo su un piano e riempire con un impasto dei vari ingredienti. 



Avvolgere  tutto nella foglia e cuocere in una padella con dell'olio extravergine di oliva.  





Cabbage rolls




Sometimes, I would like to tell you all the comments of my friends and family regarding about my inventions, experiments and names. They are quite original and fun and brighten my day.


Let me give you an example: my cousin, reading my blog's name, commented: "It looks like an alien tax code!", and my friend and proofreader, seeing the name of the chocolate brand "Van Houten", that it looks like a band of the '70s (I suppose she was referring to the Van Halen group). Well, I can't say she's wrong, I also thought the same thing when I first saw this brand name some years ago.


Well This recipe is the classical recipe to do with leftovers. Instead of throwing the food I used it for doing this recipe


Ingredients for two pieces:

2 cabbage leaves
1 tablespoon soy grit
1 tablespoon chopped celery, carrot, onion and salt (a kind of home made vegetable stock)
grated pecorino fromage
grated bread as needed
1 egg
1 tablespoon canned tuna
chopped garlic (fac)



Method:
  

Put soybeans in water with stock for 5 minutes, drain and squeeze well.



Meanwhile, cook the cabbage in boiling water until the leaves are soft, it will take about 2-3 minutes. Drain and dry them.


Lay the cabbage leaves open and put the mix of the other ingredients on them. Wrap everything inside the leaves and cook in a pan with extra virgin olive oil.

Gamberetti alla vaniglia con zucchini allo zenzero su letto di purée di daikon

Questa ricetta nasce dall'amore  sviscerato per Gordon Ramsay. Ebbene si sono una sua fan. Che dire... quell'uomo è geniale. E quando urla contro i vari chef di turno... ha sempre ragione.

Un giorno avevo questi gamberi da usare e,  non avendo la pastinaca per fare la purea come Ramsay, ho inventato questa ricetta con le cose che avevo ispirandomi a lui. La postai anche, circa un anno fa, sul forum che seguivo. All'epoca, però, nessuno l'ha capita. E mi hanno anche chiesto cos'è il daikon. Non pensavo di usare ingredienti così inusuali :P

 




   

Ingredienti:

4 o 5 gamberetti
1 cipolla
radice di zenzero fresca
zeste di 1 limone
un pezzo di radice di daikon
pepe nero di sichuan
sale
olio evo
burro di cacao
noce moscata


Preparazione:
 

Tritate la cipolla e tagliate lo zenzero piccolo piccolo, (io ormai  lo rendo talmente piccolo che sembra quasi tritato), pulite e affettate lo zucchino a rondelle. Pulite e lavate i gamberetti, poi asciugateli bene.

Fate bollire per qualche minuto la radice di daikon tagliata a fettone, in modo che sia quasi cotta (ma non cotta del tutto, deve insomma rimanere ancora croccante: la forchetta deve piantarsi e la radice non deve sfaldarsi, perché serve che rimanga croccante anche quando sarà servita). Subito dopo averla tolta dall'acqua, mettetela sotto l'acqua corrente fredda per evitare che cuocia ancora. Tagliatela a pezzettini piccoli e mettetela in un contenitore con appena un goccio di panna (io ho usato quella di soia anche per non alterare troppo il sapore), un goccio di noce moscata, sale e pepe di Sichuan, pochissima cipolla tritata (il più fine che riuscite) e un poco di zenzero tritato finissimo. Prendete un minipimer e riducetela in purée.

In una padella antiaderente mettete un po' di olio evo e, quando è caldo, metteteci le cipolle a soffriggere e poco dopo aggiungete un po' di zenzero tritato. Quando le cipolle saranno imbiondite aggiungete gli zucchini e coprite con un coperchio. Controllate che non brucino e in caso aggiungete dell'acqua. Quasi a metà cottura regolate di sale e pepe nero di Sichuan e aggiungete la zeste del limone. Quando saranno quasi cotti, metterteli da parte in modo che non scuociano più tardi quando li riscalderemo.

Prendete una padellina, aggiungete del burro di cacao e versateci la purea di daikon. Lasciate cuocere appena per amalgamare bene i vari ingredienti e fateli rassodare bene. Spegnete.
Mi raccomando, il daikon deve comunque restare croccante, cotto ma croccante.

Prendere un'altra padella e mettete il burro di cacao a scaldare. Quando sarà caldo metteteci pochissime cipolle tritate e un poco di zenzero tritato. Quando le cipolle saranno imbiondite aggiungete i gamberetti e girarteli velocemente. Aggiustate di sale, aggiungete della vaniglia bourbon e terminate la cottura.
A cottura terminata spolverizzate col pepe di Sichuan. Nel frattempo scaldate gli zucchini e aggiungete il pepe.



Shrimps with vanilla and zucchini with ginger on a bed of daikon


This recipe is born from my love for Gordon Ramsay. Well yes, I am a fan of his. In other words think that man is brillian. And when he screams against the other chefs...  he's always right.

One day, I had these shrimps and didn't had the parsnip for making purée like Ramsay use to do, so I decided to use daikon instead and I invented this recipe inspired by him.

I wrote this recipe in a forum I followed, but, at that time, no one undestood it. And, also, people asked me what this “daikon” thing was. I didn't think I used such strange and unusual ingredients :P

Ingredients:

4 or 5Shrimps
1 onion
fresh ginger root
zeste of 1 lemon
a piece of daikon root
sichuan black pepper
salt
extra virgin olive oil
cocoa butter
nutmeg

Process:
 

Chop the onion and the ginger in very tiny pieces, clean  the zucchini and slice them into rounds. Clean and wash the shrimps and then dry them very well.

Boil for a few minutes the daikon root previously sliced in pieces: we need it to be cooked but yet to remain crisp.
Afterwards, remove it from the stove and place it under  icy running water. Then slice it and place it in a container with a little bit of cream ( I used soia heavy cream not to alter excessively the flavor), the nutmeg, salt and pepper of Sichuan, a little bit of onion chopped very tiny and a litttle bit of chopped ginger. Use an immersion blender and reduce it in purée.

Put a little bit of oil in a pan until it becomes hot, then fry the onions and add  the ginger and the zucchini and cover with a lid. Make sure not to burn it and, if necessary, add water. When it's almost half cooked, add salt and black pepper of Sichuan and the lemon zest. When the zucchini are almost cooked set them aside so that they doesn't overcook later, when we reheat them.

 Take a pan, put the cocoa butter in it and pour the pureed daikon inside. Simmer just to mix all the ingredients well and firm. Turn off the heat.

Take another pan. Put the cocoa butter in it to warm it up. When it is hot, add the finely chopped onion and gingerWhen the onions are browned, add the shrimps and stir them quickly. Add the salt, the vanilla bourbon and finish cooking with the pepper. Reheat the  zucchini and add the pepper. Place everything in a plate.
