Matcha kudzu mochi




ecco, in estate un dolce leggero e fresco ci vuole proprio. Ed è anche facile da realizzare.
Avevo visto questa ricetta qualche anno fa su youtube, cosi ho finalmente deciso di provare farli. Potete guardare il video a questo link.

Ingredienti:
25 gr polvere di kudzu (se lo trovate in pezzi come me va bene anche quello) (0,88 oz)
15 grammi di zucchero (io ho usato quello di canna) (0,53 oz)
1/2 cucchiaino di matcha
125 cc di acqua (0,53 U.S. cups)

anko (io non l'avevo e ho usato della kinako, la farina di soia tostata)

Procedimento:
Mettete il kudzu in unaciocola e setaciateci dentro anche il matcha. Aggiungete lo zucchero e un 1/3 dell'acqua. mischiate bene per sciogliere e amalgamare tutti gli ingredienti. Aggiungere il resto dell'acqua e mischiare bene.

Ora prendete il recipiente in cui andrà messo e sciacquatelo ocn dell'acqua  in modo che risulti ben inumidito e resti poi facile  sformare il nostro dolce.

A questo punto mettete in un pentolino e accendete il fornello a fuoco medio continuando a mischiare bene con la spatola finché non vedete che il composto inizia a rassodarsi e diventare trasparente. a questo punto spegnere il fuoco e continuare a mischiare per altri due minuti finché non vedete che il composto risulta bello lucido. Poi mettete il composto nel contenitore che avete precedentemente bagnato e livellate.

Coprite con pellicola trasparente. Fate raffreddare il contenitore mettendolo in un contenitore con del ghiaccio oppure come ho fatto io mettetelo in frigo.




Quando sarà ben freddo uscirà facilemtne dallo stampo e potrà essere tagliato facilmente.

Questo tipo di mochi andrebbe servito con l'anko (marmelalta di azuki) e della crema, ma al momento non li avewvo, così ho usato una semplice kinako homemade e un po' di sciroppo di zucchero di canna.

Semplice e rifnrescante, e in più sano, dato che il kudzu ha un sacco di proprietà.

When the weather is still so hot a refreshing sweet is always welcome. So I decided to make this recipe I have once saw on youtube thanks to a japanese cook. You can check the video here.

Ingredients:
25 gr kudzu powder (0,88 oz)
15 gr sugar (I sused cane sugar) (0,53 oz)
1/2 tsp matcha powder
125 cc water (0,53 U.S. cups)

anko (I didn't have it so I just used some kinako)

Method:
 Put the kudzu powder in a bowl. Add the matcha sifted. Then add the sugar and 1/3 of the water. Mix well. Now add the remaining water and mix again.

Take a pan and put and wet it with some water and set aside.

Put the mixture in a pan and cook on medium heat, always stirring, until the mixture become transparent. Then turn off the heat and continue to stir for another two minutes.

Put the mixture in the pane you have previously prepared and level. Cover with plastic wrap and let it cool with some ice and water or simply put it in the fridge like me.

When the mixture will be enoufh cool it can be extract easily and you can cut it in cubes.

This kind of mochi is usually served with anko and cream, but I didn't have it, so I just used some kinako and brown sugar syrup.

It's simple and refreshing and it's also healthy, since kudzu has a lot of qualities.
