Macarons




Alla fine li ho fatti. Erano il mio terrore, dato che spesso alla gente non vengono.
Mi sono finalmente decisa e ho provato a farli. Usando la ricetta di Montersino.
Direi che per essere la prima volta sono venuti. che ne dite?
la  ricetta è questa:

Da "Croissant e biscotti" di Luca Montersino

Ingredienti:
215 g. farina di mandorle
350 g. zucchero a velo
190 g. albumi
30 g. farina 180 W
90 g. zucchero semolato
4 g. colorante

Procedimento:

Preriscaldate il forno a 180°.

Setacciate la farina, lo zucchero a velo e la farina di mandorle. Mi raccomando non dimenticatevi di setacciare quest'ultima o l'impasto verrà troppo grumoso e i macarons non vi verranno per niente. Io addirittura non l'ho nemmeno comperata, l'ho fatta frullando le mandorle, dopo averle lasciate tutta la notte in freezer, in modo che fossero belle ghiacciate e non rilasciassero gli oli durante la frullatura.

Montate gli albumi con lo zucchero semolato (io ho usato lo zucchero di canna frullato molto sottile, tanto poi andranno colorati, per cui non mi serviva che il composto fosse bianco) fino ad ottenere una massa soda.

Poi spegnete il ken se lo avete usato e prendete una spatola e aggiungete all'impasto le farine setacciate, mescolando dall'alto verso il basso, ed il colorante.

Poi prendete una sac-à-poche e riempitela con il composto e formate le palline su una teglia  coperta con carta forno. Lasciate riposare le palline per una mezz'oretta, poi infornate abbassando il forno a 160° per circa 6-7 minuti.
Occhio col forno, perché se non lo fate prima a 180° e poi a 160° i macarons si romperanno.

Una volta freddi staccateli dalla carta forno e guarniteli a piacere. io ho fatto una ganache al cioccolato e una al te matcha.





In the end I decided to do them. I was in panic everytime someone was saying that name: macarons. But, well, this time I decided to win my fear. I used Montersino's recipe and for my first time I think they're not so bad, what do you think?

 Macarons

Ingredients:
215 g. almond flour
350 g. confectioners' sugar
190 g. albumi
30 g. flour 180 W
90 g. granulated sugar
4 g. colouring

Method:

Prehead the oven at 180°.

Sift the flours and the confectioners' sugar. Do not forget to sift the almond flour or the dough will not be smooth. I didn't bought the flour, I made it myself using almonds and putting them in the mixer, after a night in the freezer, so they couldn't release their oil while being reduced in flour.

Beat the whites with the granulated sugar until firm (I had utilised brown sugar since I like it more and I didn't need the eggs to be white).
Then take a spatula and add the flours, mixing from top to bottom. Add the colouring.

Now take a sac-à-poche and put the dough in it, form the balls on a baking pan with baking paper on it. Let it rest for 30 minutes, then put it in the oven lowering the heat to 160° for 6-7 minutes.

It is really important to start with the oven at 180° and then lowering it, cause if you don't doi it your macarons will more likely break.

Once cold you can add ganache as you like, I used two fillings, a chocolate ganache and matcha ganache.
